We’ve always believed you can learn a lot about a place by eating there. History, geography, tradition, and everyday life have a way of showing up on the plate. We’ll eat something from a paper cone on the street or spend all night over a tasting menu, and be equally happy doing both. The market stall and the Michelin kitchen each have a story worth telling.

These are the splurge meals. The ones we plan ahead for, dress up a little for, and give the whole evening to. A great tasting menu can feel like an art show you can eat: a few hours in the hands of a talented kitchen, with no idea what might come next.

Barcelona, Spain

Enigma

Albert Adria's Barcelona room turns dinner into a long sequence you cannot predict. Course after course arrives with no menu and little explanation until it is in front of you, and the line between food and theater quietly disappears.

Paris, France

L'Oiseau Blanc

On the roof of the Peninsula, with the Eiffel Tower close enough to touch, the kitchen sends out precise French plates while the city turns gold behind you. It is the kind of dinner you remember for the view and the food in equal measure.

Tucked into the hills of the Algarve, Rui Silvestre's kitchen earned its stars quietly. A long tasting menu built on the coast that surrounds it, served far enough from everything that the meal becomes the whole evening.
